Cupcakes are enjoying popularity so I thought I would give you a recipe for these delicious ones. Not only do they look tempting but they taste good too.You will need a 12 hole bun tin & paper baking cases Also, if you want to pipe the butter icing. you need a large piping bag and large star tube.
- 110g (4 oz) margarine
- 110g (4 oz) caster sugar
- 2 large eggs
- 175g (6 oz) self raising flour
- 1 lemon
- 75g (3 oz) butter
- 1775g (6 oz) icing sugar
- 2 tablespoons lemon curd
Heat the oven to Gas 5 / 190C / 375F. Place paper cases in the tins.
Cream together the margarine and sugar, gradually beat in the eggs then fold in the flour and grated zest of the lemon and the juice of half.
Divide between the paper cases and bake for approximately 20 minutes or until golden brown and firm to the touch. Allow to cool.
Topping: Beat together the butter and icing sugar add the juice of the remaining half lemon. When the cakes are cold, pipe a circle of butter icing on the tops and fill the centre with lemon curd.
Note: instead of piping the butter icing you can spread it on top of the cakes, making a dip in the centre to take the lemon curd.
